@bludika This is true, but he’s not really using water, but the salt water flavoured by the broccoli – it is essentially a vegetable stock.

That was shockingly good actually. I didnt have any cheese, so i just went with salt, pepper and a little olive oil. Amazing.
Doing it again tomorrow with cheese :)

havn’t tried it with broccoli soup, but scallops work really well sat on top of cauliflower soup. then take it to the next level by putting some julienned carrot and courgette in the bottom of the bowel before pouring the soup in. now THAT is nice!

There are several cheeses made with ash – one is the eternally stinky MorbiĆ©re, with ash in the middle in a thin layer.
I’ve heard of cheeses ripened with a chopped leaf covering too (removed prior to eating).
